These easy turkey tacos are perfect for busy weeknights, as they come together in less than 30 minutes. ½ yellow onion
Optional toppings:
Pre-heat oven to 325 degrees F.
Chop the onion. Add olive oil to a large skillet over medium heat. Add onion and sauté until translucent, approximately 3–4 minutes. Add turkey and brown evenly, mixing frequently for approximately 5–7 minutes. Add diced tomatoes with juice and taco seasoning. Mix well. Turn heat to low and cook for another 5–7 minutes, or until most of the liquid is cooked off. Remove from heat and let stand until taco shells are ready, approximately 6–7 minutes.
Arrange taco shells on a sheet pan and bake for 6–7 minutes. Fill shells with turkey mixture. Shred the lettuce and top tacos with any variety of the optional toppings that you’d like.
