Recipe: Hummus and Veggie Sandwich

This simple, quick, and nutritious veggie sandwich satisfies with tons of flavor. Make sure your sandwich maintains its crunch by stacking your ingredients in the order specified below.

Ingredients

  • 2 thin slices sprouted whole grain bread
  • ¼ cup hummus
  • ½ thinly sliced carrot
  • ¼ cup thinly sliced cucumber rounds
  • ¼ cup alfalfa sprouts
  • 1 radish, thinly sliced

Instructions

Toast bread. Spread hummus on each slice and add sprouts on top to both. This flavorful Roasted Red Pepper Hummus is surprisingly easy to make. Layer veggies on one slice in this order: radishes, carrots, and then cucumber. Add salt and pepper to taste. Place the slice without veggies on top of the other slice. Cut and serve.

  • Alfalfa sprouts are the young, sprouted seeds of the alfalfa plant. They’re commonly used on sandwiches and in salads. They have a mild flavor and are packed with vitamins and minerals. Wash them thoroughly before eating. 

Recipe notes:

  • Use any sprout or microgreen you’d like in place of the alfalfa sprouts. Baby arugula, baby kale, or baby mixed greens are other great options. 
  • If you prefer different vegetables, swap them with the ones we’ve listed.
  • If you’re making the sandwich to enjoy later, prevent it from becoming soggy by toasting the bread (optional) and layering the vegetables as detailed above.
  • This sandwich is also delicious served in a whole wheat wrap instead of on bread.
