This easy summer appetizer is fuss-free, healthy, and refreshing. And the best part is there’s no cooking required. You simply skewer tomatoes, cucumber, avocado, and basil onto toothpicks and drizzle with a zingy lemon basil vinaigrette. This recipe is a twist on traditional caprese—we're using avocado and cucumber instead of mozzarella. We love serving this appetizer alongside our favorite summer entree, Lemon Basil Turkey Burgers.

On a toothpick, skewer one cherry tomato, one basil leaf, one slice cucumber, one basil leaf, and one avocado chunk. Place onto a platter. Repeat.
